Day 7 of the Vegetarian Challenge and none other than Runner’s World Magazine’s Chief Running Officer with a career that spanned 30 years. He invented the Yasso 800s, a marathon training ritual used by countless across the globe. He has run numerous from the Ironman to the Badwater 146. Yasso also wrote a book - Life on the Run. I’ve bumped into him a couple times at the Disney Marathon when I was pacing for Clifbar but I had no idea he was a vegetarian until Michael mentioned. Michael Wardian interviewed his buddy Bart Yasso and here were his responses.
1) How long have you been vegetarian/vegan:
1, I've been a vegetarian over 30 years. I stopped eating red meat back in 1982 I started being a strict vegetarian the summer of 1988.

2) What was your first vegetarian/vegan meal:
2. No clue on my first vegetarian meal my best guess veggie stir fry.

3) What is your favorite vegetarian/vegan dish:
3. My fav is Pad Thai with tofu.

4) What food did you think you would miss and didn't:
4. Shrimp

5) What food did you find since becoming a vegetarian/vegan that you absolutely love:
5. Indian food I love dal Tadka

6) What is you favorite vegetarian/vegan race aid station fuel:
6. Fruit- cantaloupe, watermelon and pineapple.

7) What is your vegetarian/vegan junk food:
7. Energy bars

Which vegetarian/vegan restaurant is on your bucket list:
8.Moosewood in Ithaca, NY

9) What is the hardest thing about being a vegetarian/vegan:
9. Travel is the hardest I spend lots of hours in a plane. Some locations are still tough on vegetarians.

11. Thanksgiving we made a killer tofu pad thai.

12. How easy it is and how much fun it is cooking vegetarian.

13. Mots of friends have interest in becoming a vegetarian I have no clue how many I inspired.
